1 T olive oil
1 T garlic oil
1 pound ground chicken or turkey
1/4 cup San-J Gluten-Free Hoisin sauce
2 T soy sauce
1 T rice wine vinegar
2 T freshly grated ginger
1 (8-ounce) can whole water chestnuts, drained and diced
4 green onions, thinly sliced (dark green part only)
Salt and freshly ground black pepper, to taste
1 head butter lettuce
Warm olive oil over medium heat. Add meat, stirring to break it up as it cooks.
When meat is no longer pink, drain the fat. Add garlic oil, soy sauce, rice vinegar, hoisin, ginger, green onions, and water chestnuts. Simmer for 3-5 minutes.
Season to taste with salt and pepper.
To serve, spoon several tablespoons of the mixture into the center of a lettuce leaf and roll it up.
