Low FODMAP Potatoes and Green Beans (Aloo Beans)

Aloo Beans

1 pound green beans, trimmed and cut into 1/2 inch pieces

3 potatoes, peeled and cut into 6-8 pieces each 

2-3 tsp vegetable oil or ghee  

A few grains of hing* (Asoephetida) Optional

7-8 fenugreek seeds 

1/4 tsp turmeric

1/8-1/4 tsp red chilli powder (depending on spice level)

1 tsp salt

Heat oil or ghee. Add in spices in the listed order and fry for about 30 seconds each. Add potatoes and cook for 5 minutes, stirring occasionally. Stir in beans. Cover and cook on low heat until potatoes are tender, continuing to stir occasionally (add water, a teaspoon at a time, if the potatoes start to stick to the bottom of the pan). Sprinkle with garam masala and serve.

*Hing is used in many Indian recipes, and can impart an oniony flavor - perfect for low FODMAP diets!
